Here are other safety precautions to keep in mind before you start grilling:

  • If you smell gas before lighting the grill, shut off everything and let Concierge know

  • Check that all control knobs turn easily

  • Make sure you know where the gas supply shut-off is located

  • Ensure that the main burners are placed level and sitting firmly

Remember these tips to make grilling as safe and enjoyable as possible!

Before You Start Grilling

Before you You can find tools next to the grill; you may also find a lighter in the kitchen drawers.

To light any of the burners on the grill, make sure that all burner control knobs are placed in the OFF position. Then, push and hold the control knob for the main ceramic burner for 5-7 seconds, which will allow the igniter to heat. Rotate the knob to LITE; once it's ignited, you can turn the knob to your preferred heat setting.

Pre-Heating

Pre-heating the grill is important before every use. It ensures the briquettes heat up evenly and properly, for a great grilling experience each time.

To pre-heat the grill, ignite all the main burners and set them to HI. Afterward, close the hood and heat the grill for up to 15 minutes. When you have reached your preferred pre-heat temperature, switch off the burners you won't use. Be careful, since surface temperatures may reach up to 200°.

Different Types Of Grilling

Wander Calistoga Valley is equipped with a Lynx L42TR Built-in Grill, which allows you to cook using different heat intensities.

Searing Using The Trident Burner

The grill is equipped with a Trident™ infrared burner, which is commonly used by professional chefs for its high-searing temperature. These infrared burners work by targeting the gas flame toward your food through a ceramic apparatus that is filled with tiny holes.

Since temperature control is instantaneous, this form of direct heat lets you perfectly char food.

Using the Trident™ infrared burner is ideal for grilling and searing lettuce, fish, crispy chicken, and much more. The result is restaurant-style food that's juicy and tender on the inside! Remember to pre-heat before searing.

Using The Rotisserie Burner

Rotisserie cooking ensures even distribution of heat to your food. The grill is equipped with features that allow for constant rotation and also self-bastes, ideal for slow-roasting meats.

The rotisserie system has four parts: the motor, forks, skewer, and infrared burner.

The Motor:

  1. Slide the motor into one of the slots.

  2. Use the top slot only for small food, or food that will cook fast. Meanwhile, use the lower slot for bigger foods that take longer to cook.

  3. Plug the motor power cord directly into the motor and then into the power outlet found on the rear left panel. Remember that the grill should be plugged into the AC power source in order for the rotisserie to function.

  4. Put a basting pan on the grill for any food drippings on the burners or briquettes. Remember to remove the pan before you use the other burners.

Important note: Since the rotisserie burner is more prone to strong winds, there is a safety valve built in that automatically closes whenever the rotisserie burner isn't lit correctly, which may cause it to extinguish. During windy days, it's best to keep the lid shut and regularly check the burner.

The Skewer & Forks:
Use the skewer and forks to mount large food items on the rotisserie. The grill is capable of cooking large pieces of meat, as much as 50 lbs. heavy.

To use, move the warming rack up to get it out of the way, but it's built to rest in its place. Then you can mount the skewer on the grill then light the infrared burner. Avoid lighting the burner first, since this can pose the risk of burning your hands when you try to mount the skewer onto the grill.

Then, you can load the skewer by sliding a fork into it. Give the skewer a good push through the middle of the food, and slide the second fork onto it. Ensure that the food is on the center of the skewer, then push the forks together.

Any loose pieces of food should be wrapped together, such as by using butcher's string. This ensures that all food is secure.

Now, you can roll the skewer in your hands to check for stability and balance. Remember, rotation must be smooth. If any side is heavy, just adjust the skewer.

The Rotisserie Infrared Burner:

To start lighting the rotisserie infrared burner, mount the skewered food onto the grill. Follow the same lighting steps for the rotisserie mentioned above.

The rotisserie burner should then heat to your desired temperatures in a minute, reflected by the glowing surface. Be sure to shut off all other burners when using the rotisserie.

Now that's done, it's time to enjoy the restaurant-style food you've cooked all on your own!
